Located in the Old Town of Viljandi, Estonia, this project by kuidas.works transformed the ruins of a 19th-century sausage shop into a zero-cost restaurant for Restaurant 0, a television series focused on waste-free cooking, smart recycling and circular design.

Set within a historic urban context, the project balanced respect for the existing site with contemporary sustainable principles. Completed in just seven days, the design relied entirely on locally available materials and low-tech construction methods. At its centre stood a 15-ton rammed earth table built from clay sourced from nearby quarries, accompanied by sand-levelled floors and lime-painted walls. Designed for a one-night dining event, the table brought twelve guests together while making the environmental impact of materials and construction tangible.

The table itself became an integral part of the dining experience. Each of the four courses was served through a specially designed recess within the rammed earth structure, allowing the table to function as both furniture and serving vessel. For main course, meat was presented on a heated plate set into the table, with hot coals placed beneath to maintain its temperature. These interventions highlighted the relationship between material, food, and ritual, turning the act of dining into an immersive spatial experience.

The rammed earth standing table was built using only hand tools, demonstrating both the simplicity and durability of traditional building techniques. Southern Estonian clay, with its characteristic yellow and ochre tones, was combined with darker red clay imported from Lithuania. Sand was used to level the floors, while lime wash transformed graffiti-covered walls into a calm backdrop for the event.

The project was conceived as a temporary intervention with almost no waste. If left to weather, the rammed earth table would gradually return to the ground; alternatively, the material could be reused as clay plaster or paint. Apart from the tableware, which accounted for approximately one percent of the materials used, the entire installation remained biodegradable, reusable, or recyclable.
